This Tomato Basil Pesto Tastes Amazing

Tomato Basil Pasta is the epitome of simple Italian cooking that lets the freshness of the ingredients shine. The combination of juicy ripe tomatoes, fragrant basil, and al dente pasta creates a dish that is both comforting and light.

Choose High Quality Ingredients

This recipe is beloved for its ability to deliver complex flavors from just a few high-quality ingredients, embodying the essence of Mediterranean cuisine. It’s a perfect dish for any occasion, from a quick weeknight dinner to a leisurely weekend meal.

Tomatoes are a great source of vitamins C and K, potassium, and folate. They also contain antioxidants such as lycopene, which has been linked to reduced risk of heart disease and cancer. Basil adds not only a burst of flavor but also supplies a range of essential oils with anti-inflammatory properties. To make this dish even healthier, consider using whole wheat pasta for added fiber and nutrients, or toss in some grilled chicken or shrimp for extra protein.

Ingredients

  • 8 ounces pasta (spaghetti, linguine, or your choice)
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 pound ripe tomatoes, diced
  • 1/2 cup fresh basil leaves, chopped
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente. Drain and set aside.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add diced tomatoes to the skillet. Season with salt and pepper. Cook, stirring occasionally, until the tomatoes are softened, about 5 minutes.
  4. Remove from heat. Add cooked pasta and chopped basil to the skillet. Toss everything together until the pasta is well coated with the tomato sauce.
  5. Serve hot, garnished with grated Parmesan cheese if desired.
